Easy Summer Smoothie For the Busy Mama
Our family is in the midst of moving madness, as we recently listed our home for sale. Because we have to be ready to show our home at a moment's notice, the majority of our belongings have been packed up in our garage for the time being.
Cereal has become a staple for many meals during this time of waiting and transition with our home; but alas, we cannot live on Cheerios alone. With limited use of our kitchen, I have relied on quick, easy meals and snacks more than ever for our family.
This is where smoothies have come into play. What could be easier than adding simple, healthy ingredients to a blender for a tasty treat that is both satisfying and delicious? As I was packing up our kitchen, I purposefully kept our blender hidden in the back of the cabinet for this very reason.
Healthy, Kid-Friendly Treats
Especially during the scorching summer temperatures, this easy, kid-friendly smoothie is packed with nutrition and whipped together with minimal ingredients and prep time. I also love that smoothies are versatile recipes; meaning, you can really customize it however you want. Use whatever fruit you might have on hand, throw in some leafy greens, and swap out the milk with any liquid of your liking, including almond milk, soy milk, etc.
In preparing snacks for my kiddos, I intentionally try to create something simple that combines all the major macronutrients, including carbohydrates, proteins, and fats. This easy smoothie recipe definitely fits the bill while offering fiber, calcium, vitamin C, and healthy omega-3 fats.
I serve this up as part of breakfast or for a midday snack, and my kiddos slurp it right up. For any busy mama who is looking to serve her kids something delicious, healthy, and fun for the summer, try out this simple smoothie recipe for an easy treat:
Berry-Delicious Summer Smoothie
Ingredients:
Handful fresh spinach leaves (can swap out with any other leafy greens you may have on hand, or you can leave this out altogether)
2 cups frozen berries (I use a mixed berry medley blend from Costco)
1 cup milk (Use any milk of your liking)
2 tbsp chia seeds
Honey to taste (optional)
Directions:
Add all ingredients minus chia seeds to your blender. Get your kids involved in the kitchen and let them add ingredients. Pulse until smooth. Add more liquid if needed to reach desired consistency. To create more of a frozen “slush”, add crushed ice. Once ingredients are blended, add chia seeds and pulse until combined. Serve immediately and enjoy!
