Mexican Breakfast Tacos Recipe: Easy Weeknight Dinners

With the summer temperatures quickly skyrocketing, I want to be able to prepare a home-cooked meal for my family that is quick and requires minimal time in the kitchen over a hot stove.

Breakfast for dinner has always been a family favorite that fits the bill, but in effort to move beyond the standard breakfast repertoire, I’ve added a spin on a popular weeknight meal:

Tacos - meet breakfast, a combination for a tasty, satisfying weeknight meal that can easily be put together in minutes. Bonus:  This is a kid-friendly meal, from the prep to the eating! Have your kiddos help you out in the kitchen with some age-appropriate tasks to get them involved with the meal preparation.

Breakfast tacos combine protein, carbohydrates, and fats in a delicious way and can easily be customized to meet individual taste preferences.  Perfect for a family meal that has varied palate likings.  I typically will prepare the ingredients and set them out the table, so each person can build their own breakfast tacos.  

Many of these ingredients can easily be swapped out for anything you have on hand.  I love making a bowl of fresh pico de gallo for topping, but you can use whatever jarred salsa you like for simplicity purposes.

Breakfast Taco Fillings

Ingredients:

  • Scrambled Eggs - I scramble between 8-10 eggs to feed our family of 6

  • Cooked chicken breakfast sausage, sliced

  • Shredded Mexican Cheese

  • Sliced Avocado

  • Pico de gallo (recipe below)

  • Taco-sized corn tortillas, warmed

Other filling options can include refried beans, sour cream, sliced red onions, etc.  Customize it as you like!

Fresh Pico de Gallo Salsa

Ingredients:

  • 3-4 Firm Roma Tomatoes, seeded and finely chopped

  • ½ Large White onion, finely chopped

  • ½ Jalapeño Pepper, seeded and finely chopped (can eliminate or add more, depending on preferred level of heat)

  • Fresh cilantro, about a handful, finely chopped

  • Fresh Lime Juice from 1 lime

  • Salt to season

Mix all ingredients together, adding more lime juice and/or salt to taste.  You may need to taste test and adjust to your liking.  

Breakfast Taco Assembly

Put all ingredients out for your taco bar, and let everyone assemble their own.  I love layering mine with eggs, breakfast sausage, cheese, avocado slices, and topped with fresh salsa.  Mmmm, yum!

How Kids Can Help

There are many ways you can involve your kids in the kitchen, allowing little hands to help and learn!  Our kids are 7, 5, 3, and 1, so I like to delegate age-appropriate tasks to them.  Our girls love cracking the eggs (warning, can get messy, but they are learning), stirring and scrambling the eggs, mixing salsa ingredients, and setting the table.  

Remember, weeknight dinners don't have to be complicated to be nutritious and something the whole family enjoys. Get your family together at the dinner table during a busy week for this easy, satisfying meal.
